Welcome back, friends! Winter is settling in nicely, here in Northern Michigan and February right right around the corner! I don’t know about you, but during the winter months I crave warm comfort foods. Anything warm and toasty right out of the oven and I am all about it. This past weekend I tried out these tasty Chicken Pot Pie Crescent rolls. Individual sized and perfect a perfect finger food. Serve for dinner with a light salad on the side or as game day finger food. Use store bought refrigerated crescent rolls, cream of chicken soup, fresh sauteed veggies and shredded cheese for a yummy combination of delicious comfort foods.
Chicken Pot Pie Crescent Roll Ingredients –
10.5 oz can cream of chicken soup, any brand
1 C. sliced carrots
1 C. chopped broccoli
1 small onion, diced
(2) 8 ct packages refrigerated crescent rolls
1 C. shredded colby jack or cheddar cheese
salt & pepper to taste
1 tbs. olive oil
#1. Preheat the oven to 350 degrees.
#2. Heat the tablespoon of olive oil on medium heat in a saucepan. Saute the onion, carrots and chopped broccoli until tender, about 10-15 minutes.
#3. In a large bowl, combine the sauteed vegetables, shredded cheese, cream of chicken soup and salt & pepper, mixing well.
#4. Open the crescent rolls and separate. Scoop a large tablespoon of the chicken pot pie mixture onto each crescent and gently roll it up. Place 2-3″ a part on a baking sheet.
#5. Bake for 12-15 minutes or until the crescents are cooked through and golden brown.
*Makes approximately 8 servings with 2 crescent rolls each
