Hi everyone, and welcome back! Are you ready for spring? I know I am! Getting back from vacation with the entire family last week had my head spinning and I was struggling to get back into the swing of things. I’m not sure what was going on, I had a fever and chills the last few days of vacation before flying home and I just couldn’t kick it. I felt like I was going through the motions of everyday with sending the kids back to school and catching up on housework.

With being back at home I needed to get back on track and quick. My husband and I sat down one night and did a quick meal plan for dinner ideas and these easy individual size garlic bread pizzas came to mind when we went through the fridge and freezer trying to use up ingredients we already had on hand.

The kids love pizza and so does my husband. I love garlic bread AND pizza so these were a perfect go to and we already had most of the ingredients on hand.

Garlic Bread Pizza Ingredients –

1 loaf of garlic bread, any bread (texas toast garlic bread would be yummy too, I just had regular loaves on hand in the freezer)
shredded mozzarella cheese
pepperoni any other pizza toppings you love (we are pretty basic around here)

Directions –

#1. Turn the broiler on low and slice the garlic bread into halves or quarters. Place on a baking sheet and place under the broiler. Cook on low until the garlic bread is golden brown and heated through (about 5-10 minutes, depending on your broiler).
#2. Once the garlic bread is browned, remove from the oven and let cool a few minutes.
#3. Top the garlic bread with shredded mozzarella cheese and your favorite toppings.
#4. Place the mini pizzas back under the broiler and broil on low until the cheese is melted and bubbly and heated through. Remove from the oven and allow the pizzas to cool a few minutes prior to serving.
