Tortellini Sausage Spinach Soup

Hello, again friends and welcome back! Hopefully, you are staying warm this week where ever you may be! Not being a huge fan of snow and the cold, I’m really enjoying all the fresh powder we have here in Northern Michigan! My kids love playing outside once again and I love going sledding with them at our Winter Sports Park here in Petoskey.

This week, on the blog, I’m focusing on homemade cold weather soups. Despite what you may think, homemade doesn’t have to mean it takes all day and the soups I’m sharing with you this week only take about an hour from actual prep time to serving. They also make a decent amount, so it’s perfect for freezing leftovers into smaller batches for a later time if youre worred about a big batch.

Today’s soup is a tortellini, sausage and spinach soup. It’s not meatless but if you prefer meatless, you could always omit the smoked sausage and it would be just as tasty.

Grandpa Shorter's Homemade Sausage Tortellini Soup Recipe Cold Weather Winter

Tortellini Sausage & Spinach Soup Ingredients –

8 oz smoked sausage, any brand
1 package of store bought cheese tortellini (located in the cold/dairy section)
1 tsb. olive oil
1 tbs. minced garlic
2 C. spinach, chopped
1 C. carrots, sliced
14.5 oz can of diced tomatoes
1 medium onion, diced
2 tsp. dried parsley
2 bay leaves
5 C. low sodium beef broth

Directions –

#1. Heat the olive oil in a large saucepan or dutch oven on medium high heat. Add in the chopped onions and saute until tender and translucent (about 10 minutes).
#2. Add in the smoked sausage and carrots and continue to saute about 5-10 minutes.
#3. Pour in the beef broth, if it seems to boil down, you can always add more. Add in the canned tomatoes, dried parsley and bay leaves. Cover and simmer 15 minutes.
#4. Add in the package of store bought cheese tortellini and the chopped spinach. Cover and continue to simmer until the tortellin is heated through and tender (about 5-10 minutes).
#5. Remove the bay leaves prior to serving.
