Cheesy Broccoli Rice Dish
Hello, again! Welcome back and I hope that everyone had a wonderful Christmas this year! Today on the blog, I’m sharing with you an easy go-to rice dish I make a lot. I love rice and quinoa dishes and so do my kids. My husband is on the fence but hey, he doesn’t have much of a choice. If I make it, he can choose to eat it or go hungry. This rice dish an easy go-to when I want a simple, meatless lunch or an easy, homemade side dish along with whatever else I am serving for dinner.
I actually made this cheesy broccoli rice dish last night along with a store bought rotisierre chicken. Homemade and store bought = best of both worlds at my house and very little clean-up for mom. I also love this dish because it’s got good stuff in it, none of that store bought, box junk. Before kids I always made cheesy broccoli rice casserole but I would always use Cheez Wiz. You know, the stuff you buy in a jar on the shelf in the non-refrigerated area of the store? Yeah, that stuff. My husband always wondered why it didn’t have to be refrigerated….I’m not sure what I was thinking but now a day’s I’m pretty health concious (for the most part), and try to make as much of our food as I can and skip the box stuff.

Cheesy Broccoli Rice Ingredients –
1 C. uncooked, long grain rice
2 C. chicken broth or 2 C. water & 2 chicken bouillion cubes
1 C. shredded colby jack or cheddar cheese
1 C. broccoli pieces (fresh or frozen. either are fine)
Directions –
#1. Bring the 2 cups of chicken broth (or water and boullion cubes) to a boil. Add in the 1 cup of uncooked rice and reduce heat to low-medium. Cover and simmer for 10-15 minutes or until the rice is cooked through.
#2. Steam the 1 cup of broccoli pieces until forkable and add into the rice.
#3. Lastly, add in the 1 cup of shredded cheese and stir into the rice and broccoli mixture, until melted.
#4. Serve immediately.
*Makes 4-5 servings as a side dish.
