Cucumber Salad Recipe
My mom always made this cucumber salad growing up. It is a really yummy, a healthy side on hot summer nights that pairs well with any grilled meat. My dad would make BBQ chicken with so much sauce on it the sugars would caramelize – he would brush layers and layers on while grilling. So for me cucumber salad, BBQ, summer and family go together in my mind.
There is something so fresh about this salad. It is a must have on those summer nights when you eat outside and enjoy each other’s company.
Ingredients:
– 3 cucumbers
– 1 orange
– 1 part rice vinegar
– 1 part extra light olive oil (extra light because it is tasteless)
– 1 teaspoon of sugar
– 2 teaspoons of sesame oil
– dash of salt
– splash of orange juice – optional
– orange rind grated – optional
Directions:
– Peel and slice the cucumbers pretty thin.
– Peel orange, cut in half and slice up – add the cucumbers and orange slices to a salad bowl.
– Add all dressing ingredients to a jelly jar so you can shake it to mix everything together. Taste and add more of anything that is needed.
– Pour the dressing over the cucumber and orange slices – mix up. It is nice for it to sit while you prepare the rest of dinner as it will become more flavorful.
Pairs well with any grilled meat for example venison, chicken or flank steak would all be great with it.
