Slow Cooker Beef Pot Roast Grandpa Shorter's Recipe Winter Comfort Food

Hello, friends and welcome back! The recipe I am sharing with you this week is an easy winter classic slow cooker beef roast recipe that you can put together in a matter of minutes and have ready at the end of a long work day or an easy weekend meal.

During the school year, we are go, go, go with after school activities and weekend hockey tournaments. Even working from home, I often wish I had a magic wand to wave in the air and have dinner magically appear. I know I am not alone on this one, so I do tend to do a lot of batch cooking and prepping freezer meals from scratch months a head of and that helps out a ton, but sometimes my family and I get sick of that too and we are still stuck in a rut. I often turn to my slow cooker for long work days and it’s perfect for making soups, main courses, heck, I’ve even made a Homemade Chocolate Lava Cake in it! Needless to say, it’s been a round the block a few times and still going strong!

Last week, I made this homemade beef pot roast in my slow cooker. It’s so easy and so delicious and my entire family loves it. My mom taught me how to make it in the slow cooker when I first got my own apartment and really, it’s only a few steps and nothing fancy at all but totally worth the end results.

I always, brown my roast in a little bit of olive oil and minced garlic with some salt & pepper prior to putting in the slow cooker but if you prefer to just place in the slow cooker, turn it on and let it go, that totally works too. I promise! It’s super easy and it’s honestly an absolute, no-fail recipe.

Slow Cooker Beef Pot Roast Ingredients –

1 boneless beef roast
1 tbs. minced garlic
salt & pepper to taste
1 tbs olive oil
1-2 packets of onion soup mix (my husband prefers 2, but I honestly cannot tell the difference)
2 C. water
1 C. baby carrots
1 C. redskin potatoes, cubed
1 medium onion, sliced

Directions –

#1. Heat the olive oil and minced garlic in a large saucepan on medium heat. Place the boneless beef roast into the pan and brown each side (see photo).
#2. Once all sides are brown, place in the slow cooker.
#3. Add the onion soup mix to the 2 cups of water and mix, pour over the top of the beef roast and add in the sliced onion (see photo).
#4. Cover, turn the slow cooker on high and cook for 5-6 hours. If you are around 3-4 hours in, I like to cut my roast in half but this is totally optional.
#5. About 1 1/2 hours prior to the beef roast being done add the baby carrots and cubed redskin potatoes on top (see photo). Cover and allow them to cook through for about another hour and a half on high heat.

*Notes: If you prefer to not brown your beef roast prior to placing in the slow cooker, simply add the roast to the slow cooker and follow the same directions from #3 on.
