Homemade Vegetable Soup
Hello, again! This week on the blog I am all about soups! The snow is falling, the temperatures are freezing and the wind chill is bitter. What better way to warm up from a day of running or playing outside in the snow, than with a nice, piping hot bowl of homemade soup. I made 2 huge batches of soup this weekend in my dutch oven and plan on freezing at least half of what I made to have on hand later in the month or even into February.
The first soup I made was a meatless vegetable soup. Full of flavor and you won’t miss the meat, I promise. I’m on my ‘get healthy’ kick too and getting ready for vacation, so this soup is perfect for a low calorie lunch or dinner.
During the winter months we are go, go, go between hockey and family events so it’s great to have a few large batches of soup made up and ready to serve when we get home. The kids aren’t huge soup fans but they’re getting there, especially if you serve it with crusty bread and butter or even grilled cheese sandwiches on the side.
Homemade Vegetable Soup Ingredients –
1 C. carrots, sliced
1 C. celery, sliced
1 medium onion, diced
2 medium zucchini, sliced and cut in half
14.5 oz can of diced tomatoes
1 tbs. of minced garlic
1 tbs. olive olive
4-5 C. low sodium beef broth (I like to keep more on hand in case I need to add extra if it boils down)
3 bay leaves
2 tsp. dried parsley
1 tsp. dried basil
Directions –
#1. In a medium saucepan or dutch oven, heat the olive oil, chopped onion and minced garlic on medium heat. Saute the onions until tender and translucent (about 10-15 minutes).
#2. Add in the other veggies and saute for 5-10 minutes.
#3. Add in the beef broth, tomatoes, bay leaves, dried parsley and dried basil.
#4. Simmer on medium heat until the vegetables are tender.
#5. Remove the soup from heat and remove and discard the bay leaves.
#6. Serve with crackers or warm crusty bread.
