Recipe: Cherry Salsa Chicken Salad

Hello, friends! Summer is here to stay in Northern Michigan and I feel like we are so busy, even more so than during the school year. I work from home and my schedule is pretty flexible but I’m always trying to cram as much into our days with the kids as I can. Sometimes this means, quick and easy lunches and dinners that are a snap to throw together so we get on with our next adventure.

This week on the blog, I’m bringing you a delicious homemade chicken salad recipe using Brownwood Farms Cherry Salsa. I love chicken salad and eat it at least once a week. It’s so easy to put together and you can totally get away with adding whatever you like. I love that, because we often have everything on hand and I don’t have to run to the store for anything. Chicken salad is also perfect for summer. You can serve it over fresh garden lettuce, spinach, crackers or throw on a fresh baked roll or croissant. There really isn’t a wrong way to eat it.

It also keeps well in the fridge for a few days if you have leftovers. I love nothing more than pulling out easy food items like this to take out on the boat with some crackers, and cut up fruits and veggies. It’s always nice having something to nosh on out on the sandbar other than chips and pretzels.

Grandpa Shorter's Brownwood Farms Cherry Salsa Chicken Salad Recipe

Cherry Salsa Chicken Salad Ingredients –

1 1/2 C. diced or shredded chicken (this is perfect for using that leftover baked or grilled chicken you have sitting in the fridge!)
1/2 C. plain Greek yogurt
1/8 C. chopped walnuts
2 celery stalks, diced
3 tbs. Brownwood Farms Cherry Salsa
salt & pepper to taste

Directions – 

Combine all the ingredients, mixing well. Serve over a bed of fresh lettuce, spinach, crackers or with bread of your choice.
