Recipe: Hearty Slow Cooker Chili

Hello, again! How is everyone handling the cool fall weather? I am loving it. I just can’t believe we had the boat out on the lake last week for one last hurrah. But now, I am ready for fall. Pumpkins, hayrides, warm bowls of hearty chili? Bring it on! We haven’t turned the pellet stove on yet but we are getting close. The nights have been cool but it’s a nice change of having to throw the heavy duty Woolrich blankets back onto the bed.

Today on the blog I’m sharing a hearty slow cooker chili recipe with you. It’s super simple to throw together and is ready in only a short amount of time. If you’re not in the mood to eat right away, simply turn the slow cooker on low and let it simmer most of the day and you’ll have a hearty warm meal when you walk in the door. Serve with shredded cheese, onions, or even sour cream. Anything goes with this recipe. I’ve even substituted elk and venison burger for beef on occasion as my husband is an avid outdoors man.

Hearty Slow Cooker Chili Ingredients –

1 lb ground beef, cooked and drained
1/4 C. onion or 2 tbs. onion flakes
15 oz can of kidney beans
1-2 tsp chili powder (or more, if you prefer spicy)
15 oz can diced tomatoes
10 oz can tomato soup
6 oz can tomato paste
3-4 C. water
*shredded cheese, green onions, sour cream, crackers (optional)

Directions –

#1. Brown the ground beef and drain the liquid.
#2. While the ground beef is browning, open the cans and empty them into the slow cooker. Add in the onion and the chili powder.
#3. Add in the ground beef.
#4. Add 3-4 cups of water. I typically do this by eye. My husband cannot stand watery chili.
#5. Cook for 4-5 hours on low heat OR 2-3 hours on high heat.
#6. Serve with shredded cheese, sour cream, diced green onions and/or crackers (all optional).

A few weeks back, on the blog, I shared 10 Slow Cooker Meals for Busy Families and this chili recipe would also be perfect to add to the list. Simply brown the burger and allow it too cool. Add the burger and all the other ingredients listed to a large gallon Ziploc freezer bag and freeze for an easy, ready to throw into the slow cooker meal!
