Simple & Delicious Marinara Sauce Recipe
With spring being only a few months I’ve began lightening our meals a bit here and there. There is something about the end of winter and beginning of spring where I start to crave more heart healthy fruits and vegetables. I love hearty winter meals but there is something about eating lighter and healthier come spring. I work out several days a week but even during the winter I tend to eat ‘not so healthy’ so come spring I am ready for a change.
We always aim for at least one meatless meal every week. We also try to limit the amount of red meat we consume. Heart disease runs in my family, as well as my husband’s family so we are very conscious of our diets . We eat quite a bit of chicken and enjoy shrimp at least once a week.
Today on the blog I am sharing a very simple and delicious marinara recipe. It’s fresh, meatless and heart healthy. Serve over cooked pasta OR zucchini noodles if you are also watching your carb intake. It’s very quick to make and perfect for a busy week night meal. If you have extras, simply cover and place in the fridge for a few days and enjoy leftovers for lunch.
Simple and Delicious Marinara Ingredients:
- 28 oz can of fire roasted diced tomatoes
- 1 tsp. granulated sugar
- 1/2 C. onion, diced
- 1 tbsp. minced garlic
- 2 tsp. dried basil
- 2 tsp. dried parsley
- 1/2 tsp. dried oregano
- salt & pepper to taste
Directions:
- Combine all the ingredients in a medium saucepan and simmer on medium/low heat for 15-20 minutes.
- Serve over freshly cooked pasta or zucchini noodles.
