Hello, friends and welcome back! With fall in full swing, now is the time of year that I love making warm and delicious comfort dishes! Easy recipes are always a plus with me, but I also like recipes that are tasty! This past weekend I worked a few Thanksgiving-esque side dishes. One of my absolute favorites side dishes, regardless of the season is green bean casserole.  I’d rather eat the green bean casserole and yummy homemade mashed potatoes instead of the turkey. Oh, and leftovers? Even better!

A little background on me, I grew up on an asparagus farm over in the Indian River. Growing up, I couldn’t stand the sight of asparagus. The smell was enough to make me run and hide. Fast forward to present day, I absolutely LOVE asparagus! Probably because I’m not having to go out into the field everyday and pick it after school.

My favorite asparagus dish is grilled asparagus, especially during the summer months. It’s simple, easy and good for you but lately, I’ve been experimenting with various pasta dishes and sauteing it with fresh veggies and cooked pasta. I was thinking of making green bean casserole with a twist this past weekend and I decided to try an asparagus version, with cheese, lots and lots of cheese. Oh, and french fried onions.

Thanksgiving Side Dish Asparagus Casserole Grandpa Shorters

Asparagus Casserole Ingredients –

2 C. fresh asparagus, cut into pieces (about 1 pound)
1 1/2-2 C. shredded cheese (less if you prefer less cheese, more if you prefer lots of cheese)
1 C. french fried onions
10.5 oz can cream of mushroom soup
salt & pepper to taste

Directions –

#1. Preheat the oven to 350 degrees.
#2. Place the cut asparagus in a shallow microwave safe dish and add about 1″ of water. Steam in the microwave, until forkable about 3-4 minutes.
#3. In a large bowl, combine the asparagus, shredded cheese, french fried onions and cream of mushroom soup. Add salt and pepper to taste. Combine all the ingredients mixing well.
#4. Pour the ingredients into a shallow baking dish and bake for 25-30 minutes.
#5. With 5-10 minutes left, add and extra handful of the french fried onions to the top of the casserole.

*Makes approximately 5-6 servings
