Light and flavorful greek chickpea salad

As I sat down to write this post, I laughed a little thinking it might seem more of a summery blog post/recipe. Something you’d probably catch me posting on a warm Jun or July day prior to heading out of the boat for a few hours to enjoy the Crooked Lake Sandbar with friends. If you thought that, you would probably be correct. I do tend to stick with seasonal recipes here on the Grandpa Shorter’s blog, but this time of year always hits me like clock work. I’m ready for summer. I really am. I do love winters in Northern Michigan and all that our area has to offer. Heck i was just out ice fishing last week with the family, however, I honestly love summer a little bit more and find myself craving longer, warmer days and dark skylit nights sitting around the campfire with friends after a long day of boating through the Inland Waterway.

This flavorful Greek Chickpea Salad recipe makes me think of summer and all the good things I enjoy about it. It’s light, refreshing and easy to make. I also bet your have all the ingredients on hand too! It only requires a few ingredients and makes for an easy and healthy lunch or light on the go dinner. Best of all, it’s healthy and packed with veggies and protein! Greek Chickpea Salad Ingredients –

15 oz can of chickpeas, drained and rinsed
1/4 C. of feta crumbles (more to taste if you prefer)
1 medium cucumber, sliced and cut into quarters
1 C. cherry or grape tomatoes, cut in half

Light and Flavorful Chickpea Salad Healthy Lunch

Directions –

#1. Combine all the ingredients, mixing well and add dressing to taste.

Greek Dressing Ingredients –

1/4 C. red wine vinegar
1/8 C. olive oil
1 tsp. garlic powder
1 tsp. oregano
1/2 tsp. salt
1/2 tsp. onion powder
pinch of pepper

*Combine the dressing ingredients and mix well. I prefer to add them to a small mason jar, shake and then store in the fridge up to 1 week.
