English Muffin Pizzas
My family loves pizza. It’s easy to make or order, delicious and you can make it just about anyway you want. Almost every week my kids beg to stop for pizza on the way home from hockey practice. It’s become tradition that every we stop at Mighty Fine Pizza or Spicy Bob’s every Thursday night. Pizza is easy, relatively cheap and convenient. My husband and I love Mighty Fine pizza with ground burger and sliced green olives but the kids love Spicy Bob’s so we try to alternate every week. And, after a busy week, I typically give in to their demands as I honestly don’t feel like making dinner at 8 o’clock at night.
When we make pizza at home, my husband and I often opt for a low carb crust. When that isn’t an option, we love making individual english muffin pizzas. I grew up making english muffin pizzas as an after school snack and now they are one of the kids favorites. English muffins make the perfect pizza base and we often have several packages of english muffins in our fridge of freezer.
English Muffin Pizzas
Ingredients:
6 English muffins, (any brand) cut in half
Pizza sauce
Pepperoni
Mozzarella cheese
Other toppings (optional)
Directions:
Preheat the oven to 350 degrees.
Place the halved english muffins on a baking sheet.
Bake for 5 minutes to crisp.
Remove from the oven and let cool.
Spread the pizza sauce on top of each english muffin half.
Add toppings.
Bake 10-12 minutes.
Remove from the oven, let cool and serve.
*Makes 12 individual pizzas
